The menu is ever evolving and based around 5 main sections: Staples, Fields & Gardens, Rivers & Seas, Farms & Pastures and Sweetness. These 5 sections flow with the seasons. We use some of the finest small artisan producers around Scotland, from individual cheese making farms, a smokehouse in the Hebrides, some line cut fish, a mushroom farm, charcuteries and the best poultry and meats. Provenance is at the heart of our menus.
